Chinese Fried Rice - cooking recipe
Ingredients

2 c. cold cooked rice
1 bunch scallions, finely chopped (green tops, too)
1/2 lb. fresh mushrooms, finely chopped
1/2 green pepper, finely chopped
2 Tbsp. vegetable oil
3 Tbsp. soy sauce or to taste
1 egg, beaten
1/2 c. finely chopped cooked pork or beef (I use leftover roast pork or beef)
Preparation

Saute veggies in oil until soft (do not burn).
Add a little more oil, if you feel mixture is too dry.
Add cold rice, meat and soy sauce to make rice brown.
Then add beaten egg and freshly ground pepper.
Fry another minute or two.
