Enchilada Squares - cooking recipe

Ingredients
    1 lb. ground beef
    1/4 c. chopped onion
    2 eggs plus 2 additional whites
    1/3 c. sliced ripe pitted olives
    2/3 c. evaporated milk
    1 c. tomato sauce
    1 envelope enchilada sauce
    2 c. corn chips
    1 c. (4 oz.) shredded Cheddar cheese
Preparation
    Cook beef and onion in skillet until beef is browned and onion is tender.
    Drain excess fat off.
    Spread beef in bottom of a 10 x 6 x 1 1/2-inch baking dish.
    Beat together the eggs, milk, tomato sauce and enchilada sauce mix; pour over meat.
    Sprinkle with sliced olives; top with corn chips.
    Bake, uncovered, in a 350\u00b0 oven for 20 to 25 minutes, or until firm.
    Cut into squares to serve.
    Makes 6 servings.
