Diabetic Strawberry Pie - cooking recipe
Ingredients

1 1/2 c. cold water
1 Tbsp. cornstarch
3 c. sliced fresh strawberries
1 (8-inch) baked pie shell
1 (3 oz.) pkg. sugar-free strawberry Jell-O
lite Cool Whip
Preparation

Combine water and cornstarch.
Cook over medium heat until it boils and thickens.
Stir constantly to prevent sticking.
Remove from heat and slowly add gelatin, stirring until well mixed.
Allow to cool 1 hour in refrigerator.
Fold in strawberries and pour into crust.
Top before serving with a spoonful of lite Cool Whip.
