Potato Lorraine - cooking recipe

Ingredients
    4 slices bacon, cooked crisp and drained
    2 eggs, beaten
    1/4 c. unseasoned bread crumbs
    1/2 tsp. salt
    1/4 tsp. pepper
    2 medium potatoes (unpeeled), grated
    1 c. chopped onion
    1 c. shredded Swiss cheese (4 oz.)
    1 tsp. paprika
Preparation
    Preheat oven to 350\u00b0.
    Crumble bacon and set aside.
    In large bowl, combine eggs, bread crumbs, salt and pepper; mix thoroughly. Stir potatoes and onion.
    Pour into buttered shallow 3 cup baking dish.
    Top with bacon and cheese.
    Dust with paprika.
    Bake 20 to 30 minutes or until lightly brown.
    Serves two.
