Ingredients

1 1/2 c. cooked rice
1 c. milk
2 slightly beaten eggs
1/3 c. sugar
1 Tbsp. butter or oleo
1 tsp. vanilla
1/3 c. raisins, currants or dates (optional)
nutmeg
Preparation

Combine rice, milk, eggs and sugar in a double boiler.
Cook over simmering water, stirring constantly until mixture coats a metal spoon.
Remove from heat and add butter and vanilla.
Add raisins, currant or dates, if desired, and mix well.
Sprinkle with nutmeg.
Serve warm or chilled.
