Pumpkin Roll - cooking recipe

Ingredients
    3 eggs
    1 c. sugar
    2/3 c. pumpkin
    1 Tbsp. lemon juice
    3/4 c. self-rising flour
    1/2 tsp. salt
    1 tsp. nutmeg
    1 tsp. ginger
    1 Tbsp. cinnamon
    1 c. chopped nuts
Preparation
    Beat eggs.
    Add sugar, pumpkin and lemon juice.
    Sift dry ingredients together and add to egg mixture.
    Mix well.
    Pour onto a 15 x 10 x 1-inch cookie sheet.
    Top with chopped nuts.
    Bake at 375\u00b0 for 15 minutes.
    Turn this over onto a towel that has been sprinkled with powdered sugar.
    Roll this up like a jelly roll with the towel rolled up with it.
    Let this cool for about 1 hour. Unroll and spread filling on it and re-roll.
    Let chill for 2 hours before slicing.
