Rice And Zucchini - cooking recipe
Ingredients

About 5 small peeled zucchini
About 1 c. chopped Vidalia onion
3 or more chopped fresh plum tomatoes
1/4 c. fresh chopped parsley
basil, salt and pepper to taste
2 c. chicken broth or water, or enough to make a loose stock
Preparation
-
Fry onion in 3 tablespoons oil until soft, not browned.
Add the peeled and sliced zucchini and the tomatoes, parsley, basil, salt and pepper.
Fry until tender but not soft.
Keep adding enough stock or water to make a loose stock to pour over rice.
If you like it more soupy, add 1 can of chopped tomatoes and cook with other tomatoes.
