Cajun Red Beans And Rice - cooking recipe

Ingredients
    1 lb. beans
    2 Tbsp. chopped parsley
    1 chopped onion
    1 chopped clove garlic
    green chopped onions
    1/2 c. chopped celery
    1/2 tsp. pepper
    1 1/4 lb. sliced hot smoked sausage
    red pepper flakes to taste
Preparation
    In a deep pot, bring the beans to a boil; set aside and soak overnight. Drain. Cover with fresh water. Add the parsley, onion, garlic, green onions, celery, pepper and smoked sausage. Add red pepper flakes to taste. Cook on low heat until thick and creamy (2 to 2 1/2 hours). May need to add salt, depending on the sausage. Serve over hot cooked rice.
