Roast Fresh Brisket - cooking recipe

Ingredients
    about 4 lb. fresh beef brisket
    2 onions
    2 celery stalks
    pepper
    bay leaf
    2 carrots
    ketchup
    chopped garlic clove
    water
Preparation
    Place beef fat side up in large heavy covered kettle over 1/2 of cut up vegetables.
    Spread some ketchup, generously over meat. Sprinkle with pepper and garlic clove.
    Top with rest of vegetables and 1 bay leaf.
    Add water to almost cover.
    Bring to a boil.
    Place in 325\u00b0 oven for 3 or 4 hours.
    Remove meat and slice fat off top.
    Wrap in foil.
    Refrigerate overnight with heavy weight on top.
    Keeps well.
    Reheat for dinner or slice for sandwiches.
