Carrot Cake - cooking recipe

Ingredients
    1 c. sugar
    1/2 c. cooking oil
    1 1/2 c. sifted flour
    2 tsp. baking powder
    1/2 tsp. baking soda
    1/4 tsp. salt
    1 tsp. cinnamon
    1 c. well packed, raw, grated carrot
    2 eggs
    1/2 c. chopped nuts
    1/2 c. cherries, cut up or chopped
Preparation
    Mix sugar and oil; add sifted dry ingredients and carrots. Add eggs, one at a time, beating well after each.
    Add nuts and cherries and mix well.
    Bake in oiled loaf pan at 350\u00b0 for 55 to 60 minutes.
    Cover cake with aluminum foil for first 20 minutes. Remove foil and continue baking.
