Spanish Rice(Vegetarian) - cooking recipe

Ingredients
    2 c. cooked brown rice
    1/2 can tomato puree
    2 bay leaves
    1 green pepper, chopped finely
    1 chili pepper, chopped finely
    1 stalk celery, chopped finely
    1 onion, chopped finely
    1 Tbsp. olive oil
    3 to 4 cloves garlic, minced
    1 tsp. each: cumin, coriander and oregano
    salt and pepper to taste
    minced fresh cilantro or parsley
Preparation
    In large skillet, saute onion in oil until soft.
    Add garlic, peppers, celery, bay leaves, spices, salt and pepper.
    Saute 3 to 4 minutes.
    Add tomato puree and rice.
    Cover and cook over low heat until warmed through.
