Ingredients

2 c. sifted flour
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
3 eggs
3/4 c. salad oil
3/4 c. buttermilk
2 c. sugar
2 tsp. vanilla
1 small can crushed pineapple, drained (save juice to be used in frosting)
2 c. grated carrots
3 1/2 oz. grated coconut
1 c. chopped nuts
Preparation

Sift dry ingredients together.
Beat eggs; add oil, buttermilk sugar and vanilla.
Mix together.
Add to dry ingredients, blending well.
Mix in drained pineapple, carrots, coconut and nuts.
Pour into 2 well-greased 9-inch cake pans.
Bake at 350\u00b0 for 35 to 40 minutes.
Cool before frosting.
