1 tsp. ginger
3/4 tsp. salt
1 c. packed brown sugar
1 c. yogurt
1/4 c. oil
2 egg whites
2 eggs
2 tsp. vanilla
1 lb. shredded carrots
1/4 c. confectioners sugar (optional)

Preheat oven to 350\u00b0.
Bundt pan makes a pretty cake, but you can use a 9 x 13-inch pan.
Spray with a nonstick vegetable spray.
