Pepper Relish - cooking recipe

Ingredients
    4 lb. green peppers (18 to 20 medium)
    1 lb. onions (3 to 4 large)
    2 c. distilled white vinegar
    1 1/4 c. granulated sugar
    2 Tbsp. salt
    1 tsp. mustard seed
    1 tsp. ground cinnamon
    1/2 tsp. ground allspice
    1/2 tsp. ground ginger
    1/2 tsp. ground cloves
Preparation
    Wash, trim and quarter peppers and onions.
    Put vegetables through a food grinder, using coarse blade; drain, discarding liquid.
    Combine vinegar and remaining ingredients in a saucepan; heat to boiling.
    Add vegetables; simmer 5 minutes, stirring occasionally.
    Continue simmering while quickly packing vegetables into hot sterilized jars.
    Leave 1/2-inch headspace.
    Make sure vinegar solution covers vegetables.
    Release air bubbles; clean tops and threads of jar.
    Tighten lids on jars.
    Process in boiling water bath for 10 minutes.
    Makes 4 pints.
