Cajun Red Beans And Rice - cooking recipe

Ingredients
    16 oz. dried red kidney beans
    1 large onion, chopped
    4 celery stalks, chopped
    2 or 3 garlic cloves, chopped
    1 tsp. cayenne pepper
    1 tsp. oregano
    1 Tbsp. dried parsley
    1 tsp. hot sauce
    3 bay leaves
    1/2 tsp. chili powder
    1/2 tsp. salt
    1/4 tsp. black pepper
    1/4 tsp. paprika
    16 oz. smoked sausage
    cooked white rice
Preparation
    The night before, wash beans and soak overnight.
    The next day, assemble all ingredients, except sausage and rice, in a slow cooker.
    Fill with water to 1-inch from top.
    Cover and cook on high for 5 to 6 hours, or until beans are tender.
    During the last hour of cooking, slice sausage in 1/2-inch pieces and add to mixture.
    When heated through, serve over hot rice with hot sauce to taste.
