Ike'S Bread - cooking recipe

Ingredients
    2 1/4 c. scalded milk, cooled
    3 Tbsp. sugar
    1 Tbsp. salt
    2 cakes compressed yeast
    2 Tbsp. soft shortening
    7 c. sifted all-purpose flour
Preparation
Mix sugar, salt and cooled milk in a large mixing bowl. Crumble yeast into the mixture and stir until dissolved.
    Add shortening.
Work flour into the mixture, until dough is easy to handle.
(May need a bit more than 7 cups flour.)
When dough is smooth and elastic, place in a greased bowl, turning once to bring greased side up.
Cover and let rise in a warm place about 1 1/2 to 2 hours or until double in bulk.
Punch down and let rise again 30 to 45 minutes, until nearly double in bulk.
Divide dough in half. Let rest, covered with a towel, for 10 minutes.
Shape into 2 loaves and place in greased pans.
Cover and let rise for about 1 hour.
Bake at 450\u00b0 for 25 to 30 minutes or until crust is neatly browned.
