Crustless Bacon Quiche - cooking recipe

Ingredients
    8 strips bacon, diced
    3 eggs
    1/2 c. buttermilk baking mix
    1 1/2 c. milk
    1/2 c. butter, melted
    dash of pepper
    1 c. shredded Cheddar cheese
Preparation
    Fry bacon in 10-inch skillet over medium heat until crisp. Remove bacon; drain on paper towel.
    Combine eggs, milk, baking mix, melted butter and pepper in blender or mixer and blend well. Pour mixture into greased 9-inch glass pie plate.
    Sprinkle with bacon and cheese.
    Press bacon and cheese below the surface, using back of spoon.
    Bake in 350\u00b0 oven 30 minutes or until knife inserted halfway between center and edge comes out clean.
    Let stand 10 minutes before serving.
    Serves 6.
