Ingredients

4 c. water
2 tsp. sugar
1 tsp. salt
2 lb. baby carrots
1/2 c. butter
1/4 c. brown sugar
1 Tbsp. cornstarch
1/4 c. fresh mint leaves, finely chopped or 1 tsp. dried mint leaves
Preparation

Combine water, sugar and salt in a large saucepan.
Add carrots, stirring well.
Bring to a boil.
Reduce heat and cook until tender.
Drain carrots, reserving 1 cup of liquid.
Set carrots aside and keep warm.
