Cheese Enchiladas - cooking recipe
Ingredients

1 c. low-fat Cheddar cheese
1 c. low-fat Monterey Jack cheese
1 c. low-fat sour cream, fat-free or lite
1 can mushroom soup
1 can chopped green chilies
1 pkg. flour tortillas
Preparation

Mix ingredients together well.
Place one spoonful of mixture into tortilla and roll (tortillas may be softened by cutting a slit in the plastic package and microwaving for approximately 20 to 25 seconds).
Place in 11 x 14-inch glass dish which has been sprayed with nonstick spray.
Cover with remaining mixture and sprinkle cheese on top.
Cover dish with plastic wrap.
Cut several air holes in the wrap and microwave on High for 10 minutes.
