Mexicali Chicken - cooking recipe

Ingredients
    vegetable cooking spray
    1 lb. boneless chicken breasts, skinned and cut into strips
    1 (15 oz.) can black beans, drained and rinsed
    1 (15 oz.) can Mexican style stewed tomatoes
    1 1/2 c. water
    1 c. converted rice
    4 tsp. chicken flavored instant bouillon or 4 chicken bouillon cubes
    4 Mexican blend cheese (optional garnish)
Preparation
    In a large nonstick skillet, over medium-high heat, cook chicken in cooking spray until no longer pink, about 5 minutes. Add remaining ingredients; bring to a boil.
    Reduce heat, cover and simmer 20 minutes.
    Remove from heat and let stand about 5 minutes before serving.
    Garnish with optional ingredients; sprinkle with cheese.
    Serve and enjoy!
