Favorite Sweet Potato Souffle - cooking recipe
Ingredients

3 c. mashed cooked sweet potatoes
1 c. sugar
2 Tbsp. plus 2 tsp. melted butter
1/2 tsp. salt
1/2 c. milk
2 eggs, slightly beaten
1 c. packed brown sugar
1 c. chopped pecans
1/3 c. flour
2 Tbsp. plus 2 tsp. melted butter
Preparation

Combine sweet potatoes, sugar, 2 tablespoons plus 2 teaspoons melted butter, salt, milk and eggs in bowl; mix well.
Spoon into 2-quart casserole.
Mix brown sugar, pecans, flour and remaining butter in bowl.
Sprinkle over potatoes.
Bake at 350\u00b0 for 30 minutes.
May add 1 teaspoon vanilla extract to sweet potatoes, if desired.
Yield:
8 servings.
