Potato Soup - cooking recipe

Ingredients
    1 large onion, diced
    2 c. carrots, diced
    2 c. celery, diced
    2 c. ham, diced
    4 c. potatoes, diced
    1/4 c. butter
    8 c. water
    2 c. half and half
    dash of parsley
    1 tsp. chives
    salt and white pepper
Preparation
    Combine onion, carrots, celery, ham and butter.
    Fry until onions brown.
    Stir in water.
    Add potatoes, half and half, parsley and chives.
    Cook 1/2 to 1 hour or until potatoes are tender.
    Season to taste with salt and pepper.
    Thicken with 1/2 cup cornstarch dissolved in water.
