Hot And Sour Soup - cooking recipe

Ingredients
    6 trimmed scallions
    8 c. chicken broth
    1 (2-inch) piece of ginger, peeled and thinly sliced
    1 tsp. crushed white peppercorns
    2 tsp. peanut oil
    1/4 lb. shiitake mushrooms, thinly sliced
    3 c. shredded nappa cabbage
    1/2 lb. firm tofu (1/2 chunks)
    2 c. shredded dark turkey
    2 Tbsp. cornstarch
    1/4 c. rice wine vinegar
    1 large egg, slightly beaten
Preparation
    Remove green portion of scallions; thinly slice.
    Set aside. Cut white portion in 2-inch lengths.
    In a large saucepan, bring white scallions, chicken stock, ginger and peppercorns to a boil over high heat.
    Reduce to medium heat; simmer 15 minutes.
    Strain and reserve.
