Zucchini Relish - cooking recipe

Ingredients
    10 c. ground or shredded zucchini
    2 c. ground onions
    3 red sweet peppers, ground (for color)
    5 Tbsp. salt
    2 1/2 c. vinegar
    6 c. sugar
    1 Tbsp. turmeric
    2 Tbsp. celery seed
    2 Tbsp. cornstarch
    1/2 tsp. pepper
    1 Tbsp. nutmeg
Preparation
    Mix first 4 ingredients together in large bowl; add enough water to cover vegetables.
    Let stand overnight in refrigerator. Next day, drain.
    Add remaining ingredients (in large pan).
    Bring to a slow boil over low heat (about 30 minutes).
    Put into sterilized jars while hot.
    Slow boil in hot water bath for 30 minutes.
