Rainbow Shrimp Salad - cooking recipe
Ingredients

1 c. cleaned, cooked shrimp
3 c. cooked rice
1/4 c. sliced celery
1/4 c. sliced pimiento-stuffed olives
1/4 c. chopped green pepper
1/4 c. chopped pimiento
1/4 c. minced onion
1/2 tsp. salt
1/4 tsp. pepper
3 Tbsp. mayonnaise or salad dressing
crisp lettuce
2 tomatoes, cut in wedges
1/4 c. French dressing
1 lemon, cut into wedges
Preparation

Split each shrimp lengthwise. Combine shrimp, rice, celery, olives, green pepper, pimiento and onion in large bowl; cover and chill.
