New Orleans Style Beignets(Ben-Yae) - cooking recipe

Ingredients
    2 3/4 to 3 1/4 c. all-purpose flour
    1 pkg. active dry yeast
    1/2 tsp. ground nutmeg
    1 c. milk
    1/4 c. sugar
    2 Tbsp. shortening
    1/2 tsp. salt
    1 egg
    shortening or cooking oil (for deep-fat frying)
    powdered sugar
Preparation
    In a large mixer bowl, stir together 1 1/4 cups of the flour, yeast and nutmeg, if desired.
    In a saucepan, heat milk, sugar, 2 tablespoons shortening and salt just until warm (115\u00b0 to 120\u00b0) and the shortening is almost melted, stirring the mixture constantly. Add the heated mixture to the flour mixture.
    Add egg.
    Beat with an electric mixer on low speed.
    Using a spoon, stir in enough of the remaining flour to make a soft dough.
