Chicken And Spinach With Cheese Casserole - cooking recipe

Ingredients
    1 pkg. chopped frozen spinach
    15 oz. pkg. Ricotta cheese
    1/2 to 3/4 lb. Mozzarella cheese, cut in pieces
    one medium onion, chopped
    one clove garlic (optional)
    3 to 4 boneless chicken breasts
    bit of Parmesan cheese
    pepper to taste
    1/2 tsp. parsley
Preparation
    Saute onion and garlic in pan which has been sprayed with Pam. Add spinach and Ricotta cheese; sprinkle in Parmesan cheese and pepper and parsley.
    Mix all together and stir in frying pan. When mixture is at pick-up consistency, roll in chicken breast. Bake for 30 minutes at 325\u00b0.
    Makes 4 servings.
