Mom'S Special Quick Quiche - cooking recipe
Ingredients

12 slices crispy cooked bacon, crumbled
1/2 c. shredded Cheddar cheese (low-fat)
1/2 c. shredded Swiss cheese (low-fat)
1/3 c. finely chopped onion
1 small can mushrooms, drained
2 c. milk (2% or skim)
1 c. Bisquick baking mix (low-cholesterol)
4 eggs or egg substitute
salt and pepper to taste
Parmesan cheese
Preparation

Heat oven to 400\u00b0.
Lightly spray a 9 or 10-inch pie plate or quiche pan with Pam.
Sprinkle cheese, bacon, mushrooms and onion evenly over bottom of pan.
Mix Bisquick, milk, eggs, salt and pepper in blender or food processor.
Pour mixture over ingredients already in pan.
Bake about 30 to 35 minutes, until golden brown.
Sprinkle with Parmesan cheese while hot.
Let stand 5 minutes before cutting.
Great for breakfast or brunch! Refrigerate leftovers.
Makes 6 servings.
