Mushroom-Barley Casserole - cooking recipe

Ingredients
    1 Tbsp. oil
    1/2 c. celery, chopped
    1/2 c. green pepper, chopped
    1/2 c. onion, chopped
    1/2 c. fresh mushrooms, sliced
    1 clove garlic, minced
    3/4 tsp. oregano
    1/4 tsp. thyme
    1/4 tsp. salt
    1/8 tsp. pepper
    1 1/2 b. barley (uncooked)
    1 1/2 c. vegetable broth
    1 1/2 c. water
    3 oz. (3/4 c.) Cheddar cheese, shredded
Preparation
    In a large skillet, heat oil over medium-high heat.
    Add celery, green pepper, onion, mushrooms, garlic and seasonings. Saute 5 minutes until tender.
    Spoon into a 1 1/2-quart casserole. Stir in barley and mix well.
    Add broth and water.
    Cover and bake 1 1/4 hours until barley is tender.
    Stir occasionally. Raise temperature to broil.
    Uncover casserole.
    Add cheese to the top.
    Broil 3 inches from heat for about 3 minutes and serve.
