Jambalaya - cooking recipe
Ingredients

1 large onion
1 large green pepper, chopped
3 ribs celery, chopped
3 large cloves garlic, chopped
4 Tbsp. butter, margarine or olive oil
1 lb. smoked sausage, thinly sliced
2 c. long grain rice
3 c. chicken stock
1 (8 oz.) can tomato sauce
1/4 tsp. red pepper
1/4 tsp. white pepper
1/4 tsp. black pepper
1/4 tsp. allspice
1 lb. shrimp, peeled
Preparation

Place chopped vegetables in very heavy bottom pot with butter, margarine or oil. Saute for several minutes. Add sausage and saute 5 minutes longer. Add rice; stir and add chicken stock, tomato sauce and shrimp. Bring to a boil and cook uncovered slowly until almost all liquid is absorbed, stirring twice. Cover tightly and continue cooking with very low flame for 30 minutes or until rice is done. Serves 6 to 8.
