Hearty Bean Soup - cooking recipe
Ingredients

2 c. dried beans
1 lb. ham
1 can tomatoes, chopped
1 can tomatoes with green chilies (I use Ro-Tel)
1 clove garlic or 1/4 tsp. garlic powder
1 medium onion, chopped
Preparation

Wash dried beans and cover with warm water.
Let soak overnight.
Pour off water.
In large Dutch oven or stock pot, put all ingredients and about 1 quart of water.
Bring to a boil, turn down heat and let simmer for two or three hours or until beans are tender.
Salt and pepper to taste.
Add water occasionally as needed.
Serve with hot cornbread or crackers.
