Potato Croquettes - cooking recipe

Ingredients
    4 c. mashed potatoes
    2 Tbsp. milk
    1/2 tsp. salt
    1 tsp. minced onion
    2 egg yolks, beaten
    2 Tbsp. melted butter
    1/8 tsp. black pepper
    1 beaten egg + 1 Tbsp. water, mixed
    cracker crumbs
Preparation
    Add milk, salt, pepper, onion, butter and egg yolks to mashed potatoes. Mix well; chill and form into balls about 2-inches in diameter. Roll in crumbs, then in egg and water, beaten together; then again in crumbs. Fry a few at a time in deep fat until golden brown. Makes 14.
