Hot Potato Salad - cooking recipe
Ingredients

4 cooked potatoes
1/3 c. diced celery
1/4 c. minced onion
1/4 c. diced green pepper
1/4 c. vinegar
1 tsp. salt
1/8 tsp. pepper
1/2 tsp. dry mustard
2 hard-cooked eggs, chopped
1/4 c. hot bacon fat
1 1/2 c. grated cheese (optional)
Preparation

Cook potatoes as directed for boiled potatoes.
Drain.
Cube potatoes and combine with celery, green pepper, vinegar, seasoning and chopped eggs.
Toss lightly to mix.
Add bacon fat.
Spoon into an 8-inch glass dish.
Cook with microwave for 9 minutes. Top with cheese.
Cook 4 minutes longer.
Recipe yields 6 servings.
