Macaroons I - cooking recipe
Ingredients

2 egg whites
4 oz. ground almonds
8 oz. sugar
1 Tbsp. ground rice
few drops of almond essence
little egg white to glaze
Preparation

Whisk egg whites stiffly.
Stir in almonds, sugar, ground rice and flavorings.
Grease baking sheet or flat pan.
Cover with greased brown paper.
Place mixture in heaps (small) or pipe small rounds, leaving room to spread.
Place an almond on top and bake at 350\u00b0 for 20 to 25 minutes.
It is important to bake macaroons slowly to allow to color evenly and get a good texture.
