Baked Roughy With Caribbean Sauce - cooking recipe

Ingredients
    4 orange roughy fillets
    salt
    pepper
    2 carambola, star fruit, sliced very thinly, optional
    1/2 c. low-fat sour cream
    2 Tbsp. fresh lime juice
    2 Tbsp. fresh cilantro, chopped
    1 jalapeno, seeded and chopped
    1/8 tsp. salt
    Non-stick cooking spray
Preparation
    Heat oven to 450 degrees.
    Spray a shallow baking pan with non-stick spray.
    Lay fish fillets in bottom of baking dish. Season fish lightly with salt and pepper.
    Bake fish in upper 1/3 of oven for 10 minutes.
    Meanwhile, combine sour cream, lime juice, cilantro, jalapeno and salt in a food processor or blender to make sauce.
    Process 1 minute or until cilantro and jalapeno are finely chopped.
    Slice carambola and lay over fillets.
    Serve with sauce.
