Green Rice - cooking recipe

Ingredients
    1 c. onions, chopped
    1/4 c. cooking oil
    1 1/2 c. rice (uncooked)
    2/3 c. green peppers, minced
    1/3 c. parsley, minced
    3 c. chicken stock
    1 tsp. salt
    1/4 tsp. pepper
Preparation
    Saute onions in salad oil until tender, but not browned.
    Add remaining ingredients.
    Pour into a 2-quart baking pan.
    Cover. Bake in oven at 350\u00b0 for about 45 minutes or until rice is tender. Toss lightly with a fork before serving.
    Serves 6 to 8.
