Mexican Rice - cooking recipe

Ingredients
    1 small green pepper, chopped
    1 small onion, chopped
    1 Tbsp. oil
    1 c. mild salsa
    1 c. chicken broth
    1 c. regular rice
    10 oz. frozen corn
    1/2 c. Cheddar cheese, shredded
Preparation
    In medium saucepan, saute pepper and onion in oil.
    Add broth, salsa and corn; bring to a boil.
    Add rice, flake with a fork and reduce heat to low.
    Cover. Cook 15 to 20 minutes until rice is tender.
    Serve garnished with cheese.
    Makes 6 to 8 servings.
