Ingredients

2 large green cucumbers
2 tsp. salt
1 small clove garlic, crushed
1/4 tsp. finely grated fresh ginger
1 c. yogurt
lemon juice to taste
Preparation

Peel and slice cucumbers very thinly.
Put in a bowl, sprinkle with salt and chill about 1 hour. Pour off the liquid, pressing out as much as possible.
Mix garlic and ginger into yogurt, then stir in the cucumbers.
Combine thoroughly.
Taste and add more salt if necessary. Add lemon juice to taste.
Serve chilled.
