Pork Chalupas - cooking recipe

1 (1 lb.) pkg. pinto beans
1 (3 lb.) pork loin roast
1 (4 oz.) can green chilies
2 Tbsp. cumin seed
1 Tbsp. salt
2 cloves garlic, chopped
1 tsp. oregano
corn chips
shredded Cheddar cheese
shredded lettuce
chopped onion
diced tomato
1 (7 1/2 oz.) jar jalapeno relish
Preparation

Sort and wash beans.
Combine beans, roast, chilies, cumin, salt, garlic and oregano in a large Dutch oven; cover with water. Cover and simmer 6 hours, stirring occasionally, adding water as needed.
