Chilled Cucumber Soup - cooking recipe
Ingredients

2 Tbsp. minced onion
1/2 stick margarine
1/4 c. flour
1 tsp. salt
3 c. milk
1 c. light cream
4 c. finely chopped cucumber, peeled and seeded
Preparation

Saute onion in margarine in saucepan until tender.
Blend in flour and salt; stir in milk and cream gradually.
Cook until thick, stirring constantly.
Combine cream sauce and cucumbers in blender container.
Process until smooth.
Chill thoroughly. Serve in chilled bowls.
Set in ice.
Garnish with thinly sliced, unpeeled cucumber.
Yields 6 servings.
