Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant
    1 medium onion, chopped
    2 ribs celery, chopped
    1 egg, beaten
    1 c. milk
    2 Tbsp. margarine
    10 saltines, crushed
    black pepper to taste
    grated cheese
Preparation
    Peel and cut up eggplant.
    Boil in salted water with onion and celery.
    Drain well.
    Mix all other ingredients, except cheese. Pour into greased baking dish.
    Cover top with grated cheese. Bake in 350\u00b0 oven for about 25 minutes.
