Red Beans And Rice - cooking recipe

Ingredients
    1 lb. red beans, sorted and washed
    1 lb. smoked sausage
    1 medium onion, chopped
    1/3 bell pepper, chopped
    salt and pepper to taste
    cooked rice
Preparation
    Soak beans overnight in water to cover.
    In same soaking water, bring beans to a boil.
    Lower heat and simmer for 1 1/2 to 2 hours.
    Add smoked sausage, onion, bell pepper, salt and pepper. Simmer another 1 1/2 hours or until beans and sausage are tender. Serve over cooked rice.
