Elegant Chicken - cooking recipe

Ingredients
    5 lb. raw, boned chicken breast
    3/4 tsp. salt
    dash of pepper
    1/4 c. oil
    1/2 c. cornstarch
    3 egg whites
    1/4 lb. margarine
    1/2 c. oil
    dash of parsley flakes
    1/8 c. dried chives
Preparation
    In large bowl, combine chicken strips, salt and pepper.
    Cover and let set overnight in refrigerator.
    The following day, pour oil over chicken, then stir in cornstarch.
    Let set 1/2 hour before preparation.
    Whip egg whites until foamy.
    Pour over chicken.
    Let stand 30 minutes.
    In hot skillet, melt margarine and oil.
    Add chicken and saute 10 to 15 minutes or until nicely browned.
    Put in dish and add parsley and chives.
    Can serve alone or with rice.
