Nicholson Family Gazpacho - cooking recipe
Ingredients

1 large red onion, chopped
1 bunch radishes, sliced
1 large cucumber, sliced
1 large green pepper, chopped medium
1 large red pepper, chopped medium
1 bottle red wine vinegar and oil salad dressing
1 (32 oz.) can V-8 juice
garlic, salt and pepper to taste
Preparation

Mix all ingredients except V-8 juice and let stand 45 minutes, stirring every 5 to 10 minutes.
Add V-8 juice and refrigerate for 24 hours.
You can use the marinade over and over until it gets too weak.
This is like icebox pickles, just keep adding veggies when it gets low.
