Rice And Spinach Saute - cooking recipe

Ingredients
    1 c. rice
    2 Tbsp. olive or vegetable oil
    1 red pepper, diced
    1 garlic clove, minced
    1/2 lb. fresh spinach, chopped
    1/2 tsp. salt
    1/4 tsp. pepper
Preparation
    Prepare rice according to package directions.
    In large skillet, heat oil over medium heat.
    Add red pepper and garlic. Cook until red pepper softens and garlic is lightly browned, about 4 minutes.
    Add spinach.
    Cook, stirring, until spinach is wilted, 3 to 4 minutes.
    Add salt, pepper and cooked rice.
    Heat through. Makes 4 servings.
