Reduced Sodium Apple Rice Pudding - cooking recipe

Ingredients
    1/2 c. thinly sliced dried apricots
    1 c. boiling water for apricots
    1/2 c. raw brown rice
    4 c. boiling water for rice
    1 1/2 c. milk
    2 c. diced unpeeled apples
    1/2 tsp. cinnamon
    1/4 tsp. nutmeg
    1/4 tsp. allspice
    1 Tbsp. oil
Preparation
    Heat oven to 325\u00b0.
    Soak apricots in boiling water for 30 minutes; drain.
    Cook rice in 4 cups boiling water for about 12 minutes or until soft.
    Drain well.
    Mix milk, apples, apricots and spices into cooked rice.
    Grease 1 1/2-quart baking dish with the oil.
    Pour pudding into dish.
    Bake for 1 hour or until browned.
    Makes 6 servings at 168 calories per serving.
