Christmas Pie - cooking recipe

Ingredients
    1 envelope unflavored gelatin
    1/2 c. sugar
    1/8 tsp. salt
    2 eggs, separated
    1 1/4 c. milk
    1 tsp. peppermint flavoring
    1 c. heavy cream, whipped
    green food coloring
    1 (9-inch
    ) chocolate cookie crust
Preparation
    Mix gelatin, 1/4 cup sugar and salt in medium saucepan.
    Beat together egg yolks and milk.
    Stir in gelatin mixture.
    Place over low heat until gelatin dissolves and mixture thickens slightly, about 5 minutes.
    Remove from heat; stir in peppermint. Chill, stirring occasionally, until mixture mounds slightly when dropped from spoon.
    Beat egg whites until stiff but not dry. Gradually add 1/4 cup sugar; beat until stiff.
    Fold in gelatin mixture.
    Fold in whipped cream.
    Add enough green food color to make a nice shade.
    Pour into pie shell.
    Chill until firm. Garnish with cherries.
