Blueberry Muffins - cooking recipe
Ingredients

2 c. all-purpose flour, sifted
1 1/2 tsp. baking powder
1/4 tsp. salt
1/2 c. margarine, softened
1 c. sugar
2 eggs, unbeaten
1 tsp. vanilla
1/2 c. milk
1 c. fresh or thawed, frozen and drained blueberries
Preparation

Preheat oven to 375\u00b0.
Use paper liners or grease 18 muffin cups.
Mix flour, baking powder and salt.
Set aside.
In a large bowl with electric mixer at high speed, beat margarine with sugar, eggs and vanilla until light and fluffy, about 4 minutes.
At low speed, add flour mixture with milk.
Beat until smooth.
Gently fold in blueberries.
Pour 1/4 cup batter into each muffin cup. Bake 20 to 25 minutes.
Remove muffins to wire rack.
Let cool. May be sprinkled with confectioners sugar.
May be baked in king size muffin cups (6).
