Make Ahead Mexican Casserole - cooking recipe

Ingredients
    1 lb. ground meat
    1 large onion, chopped
    1 (10 oz.) can Ro-Tel tomatoes
    1 (10 3/4 oz.) can cream of mushroom soup and cream of chicken soup
    1 (10 oz.) can enchilada sauce
    2 doz. corn tortillas, cut into eighths
    2 c. shredded cheese
Preparation
    Saute ground meat and onion until lightly browned, stirring to crumble the meat.
    Stir in remaining ingredients, except tortillas and cheese.
    Alternate meat mixture and tortillas, beginning and ending with the meat mixture in a greased 13 x 9 x 2-inch casserole; sprinkle with cheese.
    Bake at 350\u00b0 for 35 minutes or until bubbly.
