Potato Candy - cooking recipe

Ingredients
    1 medium potato
    1/2 tsp. vanilla or flavoring
    1 tsp. oleo
    peanut butter
    1 or 2 lb. powdered sugar
    flour
Preparation
    Make a flour and powdered sugar mixture to roll dough with. Peel and cut potato.
    Boil until done.
    Mash potato.
    Add oleo and vanilla.
    Mix in powdered sugar until smooth like pie dough.
    Roll out on board.
    When rolling, put a mixture of flour and powdered sugar on it.
    Roll out like pie dough, 1/4 inch thick.
    Spread peanut butter on dough and roll dough up like a jelly roll.
    Put in refrigerator overnight.
    Slice 1/4 to 1/2-inch thick.
    Can also be dipped in chocolate.
    Makes approximately 2 pounds candy.
